Blueberry Thyme Tarts from Halfbaked Harvest

Half Baked Harvest blueberry lemon thyme tarts with a scoop of ice cream on top😋 I couldn’t find puff pastry at the store so I made some with:

Ingredients:

  • 2 cups flour

  • 12 tbsp butter

  • pinch of salt

  • 6-8 tbsp cold water

  • 1 egg

Directions:

In a large bowl whisk together the flour and salt. 

Add some chilled water to a liquid measuring cup or small bowl and set aside. For an extra flakey puff pastry you can add a tablespoon of lemon juice. 

Chop the butter into very small cubes. The smaller they are, the better. 

Place the butter into the bowl with the flour. Use your fingertips to break up the butter pieces until you have a crumble. 

Pour in all of the water and use your hands to bring the dough together. It should be able to form a ball, but not be sticky. 

Make a disk with the dough and cover it in plastic wrap. Refrigerate for at least an hour. You can also put your dough in the freezer for 20-30 minutes but it will be more difficult to roll out.
